A Welcome to Café Bloom. This handbook applies to all barista and front-of-counter staff, and covers the practical procedures you will use every shift, alongside the food hygiene training you completed before your first day. Every new barista shadows an experienced colleague for their first three shifts before working the till independently, regardless of any previous barista experience elsewhere. B Milk and food waste must be recorded on the daily wastage sheet before the end of each shift, noting the item, the quantity, and the reason — spoiled stock, a mistaken order, or a customer complaint are the three categories used. This is not a disciplinary record; the café's ordering is adjusted each month based on wastage patterns, so accurate recording directly affects how much stock is ordered going forward. C The till accepts cash, card and the café's own loyalty app, and a float of £50 is counted at the start and end of every shift by two members of staff together, never by one person alone. Any discrepancy of more than £2 must be reported to the shift supervisor immediately rather than at the end of the day, so that CCTV footage from the relevant period can still be reviewed if needed. D Staff may have one free hot drink per shift and a 50% discount on food items while on shift, but the discount does not apply to drinks or food taken off-site after a shift ends. Sampling a new seasonal drink during a training session is not counted against the free-drink allowance, since this is treated as required training rather than a personal drink. E Breaks are taken according to shift length: a fifteen-minute paid break for shifts of four to six hours, and a thirty-minute unpaid break for shifts over six hours, which must be taken away from the counter area entirely, in the staff room. Baristas should notify a colleague before stepping away so the counter is never left unstaffed, even for the short walk to the staff room.
